Sodium Carboxymethyl Cellulose is used in various food items such as frozen desserts, soft-serve, pet-foods, protein food, baked foods, beverages, desserts-icings, toppings, low calorie foods, syrups, dressings-sauces, animal feed and extrusion products. It is very useful thickener, suspending Aid, imparts mouth-feel because of its film forming property. It acts as a lubricant binder, retains water and controls ice crystal growth. It is odorless, tasteless and it has no caloric growth. It controls sugar crystal size, texture and inhibits syneresis.
